Porkuary Fest: Belly-Busting Buffet Menu

After much debate, the crew at Stable Craft Brewing has come up with a belly-busting pork buffet menu worthy of being part of our first-ever Porkuary Fest! If you aren’t familiar with Porkuary Fest, let’s just say it is a celebration of all parts of the pig, so set aside your diets and come out to join the fun.

This Belly Busting Buffet Menu is perfect for all you pork lovers out there and will pair exceptionally well with a Chocolate Vanilla Milk Stout being released on Saturday. This small-batch beer was collaboratively brewed with bloggers Josh Hall of Swill & Swine and Jason Baker of Beer, Bacon & More.

Pork “U” Back Room at the Taproom- Informational Beer & Bacon Pairing Class

Saturday, January 13th 2-4pm

Stable Craft Brewing will host Pork “U” an informational beer and bacon pairing class from 2 p.m. to 4 p.m. Saturday, Jan. 13 in the back room of the tap room. Pork “U” is a beer and bacon pairing class hosted by Stable Craft’s award-winning head brewer Christopher Fann and bloggers, Jason Baker from “Beer Bacon & More” and Josh Hall from “Swill & Swine”.


Fann, Baker, and Hall will each offer a particular expertise to this class as they walk participants through pairing six different Stable Craft beers with six different types of bacon. Matt Milhit, Stable Craft’s hospitality director and taproom manager came up with the idea to do a beer and bacon pairing class during the brewery’s Porkuary event as a way to give people the opportunity to not only learn more about Stable Craft beers, but to also teach participants about beer and food pairings.

Milhit is a veteran of the hospitality industry having worked for major resorts, such as the Greenbrier Resort in White Sulfur Springs, W.Va., Boars Head Inn in Charlottesville, Va. and Airlie Center in Warrenton, Va. He is skilled with food and beverage pairings and enjoys sharing his expert knowledge with others.

Milhit will cure all of the bacon for Pork “U” himself. He plans to have the following types of bacon available for the class:

  1. A maple whiskey brined bacon smoked on hickory
  2. An agave syrup and tequila brined bacon smoked on mesquite
  3. A brown sugar and cinnamon dry-rubbed bacon smoked on applewood
  4. A black pepper and coffee dry-rubbed bacon smoked on hickory
  5. A chili dry-rubbed bacon smoked on cherry
  6. A dry-cured Italian bacon, or pancetta

The following Stable Craft beers will be paired with the above types of bacon:

  1. Porter
  2. Roostered Red
  3. Blue Ridge Sunryes Lager
  4. Throatlatch
  5. Britchin Brown
  6. Special Collaboration Beer – This is a beer that is specifically being brewed for this event.

Milhit encourages craft beer enthusiasts, cicerones, fans of wine pairings, foodies, pork lovers and anyone else interested in learning more about pairing craft beer with bacon to sign up.

Hop Pickin’ Party at Stable Craft

It’s Hop Pickin’ time and we need your help bringing in our Hop Harvest.

Saturday, August 5th 6am – 10pm (Sunday, August 6th rain date)
August is Virginia Craft Beer Month and what better way to celebrate than learning about hop harvesting from your local farm brewery! Join the Stable Craft Team and “Stan the Hop Man” to learn all about harvesting hops.

We will provide beverages while you pick. The smoker will be full of smoked meats and terrific side dishes to compliment. We will also be releasing our Small Batch Beer “Hummingbird Cake”.

Enjoy live music at 5pm by Crystal Armentrout & Alex Arbaugh.

Beer drinking while picking is also encouraged! No need to make a reservation, just show up and we will put you to work.

• This small batch was aged on Bourbon Barrel Oak Chips which add a big boozy hit and oaky flavor.
• This big and complex Belgian Strong Ale has the typical Belgian yeast spice with hints of bubble gum, toffee, and raisins/dark fruits on the nose. It’s thick and boozy, and has a big hit of toasted caramel up front and finishes with hints of toffee, raisins and plums.

Dark Bay IPA 6.2% –
• This Black IPA is nice and roast without being astringent. Look for lots of citrus and grassy hop and a coffee like roast on the nose, with a bold bitterness up front from the hops and roasted malts used. It finishes nice and clean with a slight caramel sweetness and grassy hop note to cleanse for the next sip!

Brewing Beer for a Cause – Blue Ridge Area Food Bank’s Chocolate Orange Milk Stout

Stable Craft Brewing has teamed up with our local Blue Ridge Area Food Bank and produced a delicious beer just for them! A one of a kind Orange Chocolate Milk Stout.

The Blue Ridge Area Food Bank and our awesome brewer Chris Fann have crafted a collaboration beer you don’t want to miss! The Chocolate Orange Milk Stout is at 5.8% ABV which makes it a very drinkable milk stout. They added tons of sweet orange peel and organic cocoa nibs added to both the boil and the fermenter. You will notice big notes of chocolate and orange on the nose, and a creamy, thick, mouthfeel with tons of orange and chocolate in the taste. The flavors are paired perfectly as to not overwhelm your palate in the finish.

The color of hunger awareness is orange … oranges are delicious…why not put it in a beer? A few staff members from the Blue Ridge Area Food Bank were stoked to come out to the farm and team up with our brewer Chris Fann. They helped all day to brew a beer made specifically for them. Chris took a pilot version of our chocolate milk stout and added a scrumptious twist of sweet oranges and cocoa into the mix.

This beer will be released Thursday Dec. 8th 2016 and Stable Craft will donate $1 per pint of that beer to the food bank until the keg is kicked! Why not drink beer while helping out a wonderful cause for your community?

Stable Craft has been taking full of advantage of the smoker located right outside our taproom. Nothing warms the soul or whets the appetite more, than the delicious aroma of meat smoking. And there is that joyous feeling of smelling your dinner cook; while you kick back and enjoy that farm fresh brew – nothing can be more relaxing.

At Stable Craft Brewing, we keep the fresh smoked pulled pork on our menu daily for your enjoyment…but then, Friday rolls around, and we shake things up a bit. (Except beer, that is no bueno!)

It is possible that here at Stable Craft, we may have found a way to one up that wonderful feeling of joy when your Prime Rib is within sight. We, at Stable Craft, have teamed up with McNette Angus Beef Co., from right down the road, to bring you locally-raised farm fresh Angus beef, quite possibly the freshest cut of Prime Rib, you could ever dream of. When enjoying this Prime Rib, you will be introduced to a heavenly smoked flavor on the skin of this Prime Rib, followed by a delicious, melt in your mouth pink center. Barley fed, medium rare, locally-smoked decadence.

We’ve figured out a way to make your favorite all-time snack food even better. Stable Craft slow smokes large chicken wings to juicy perfection. Our wings are served up with that evening’s variety of scratch-made dry rubs, buffalo or BBQ sauces. We serve up these delectable wings with our own secret recipe chunky blue cheese dip and a side of crisp celery to complete the entire smoked wing experience.

Slow Smoked BBQ Brisket
There is this little rumor that brisket can be a tough cut of meat. Here at Stable Craft, we challenge that notion. We’ve figured out that brisket is perfect meat to slap on the ole smoker. Homemade BBQ sauce, plus hours of low-heat smoking, make this a luscious, tender cut of meat – fit for a king (or queen, or even your little prince and princess).

Smoked BBQ Ribs
One of life’s greatest pleasures is a rack of ribs smoked to pure perfection. Stable Craft has gotten the science of smoked ribs down to the bone. Of which the meat will fall right off, of said bone. These ribs are smoked all day to give them the flavor your taste buds crave and desire. Once these ribs are pulled, we sauce them down and serve them up- just the way you like. Served with a sweet bbq sauce to complement the smokey flavor of these ribs!
 
 

The Farm Fresh Fixins’
To accompany whatever we may be smoking that day, our in-house chef, Gary, makes all the sides from scratch – to pair deliciously with the main course of the day. Gary is constantly trying new flavor combinations and this keeps things fresh and appealing. Scratch-made mac & cheese with gouda, spinach and tomato, or perfectly stuffed twice-baked potatoes are just some of Gary’s creations. Fresh mixed greens with scratch-made dressings round out this one-of-a-kind dining experience and add a bit of healthy green to that dinner plate.
